Hi, I'm Coral, the heart behind Coral Cakes. I'm originally from sunny Spain, but Ireland has been home to my dreams since I first arrived in 2017. In 2024, I proudly graduated with a business degree from Griffith College, but long before that, my true passion was already rising in the oven: cooking.
Food has always been part of my soul; a tradition passed down through generations in my family. But everything changed in 2021 when I met my husband, who is coeliac. At first, I didn’t fully understand what that meant. But love is a powerful motivator. I immersed myself in learning about coeliac disease, experimenting in the kitchen, and finding ways to recreate the flavors we both loved without gluten, but with all the joy.
That journey opened my eyes and my heart. At the beginning of 2025, a spark turned into a vision: What if I could bring that same happiness to others with food restrictions? What if I could turn my passion into something that could be shared?
That’s how Coral Cakes was born, a place where everyone can enjoy beautiful, delicious, and safe treats, no matter their dietary needs. My mission is simple: to make people feel loved and included through food. Because everyone deserves a slice of happiness.

Our vision
My vision for Coral Cakes is to create a world where food restrictions don’t mean missing out. I want to help change the way people see gluten-free baking, proving that it can be just as delicious, comforting, and full of love as anything else. One day, I hope to see Coral Cakes bring smiles to people across Ireland (and maybe beyond), making sure that everyone feels included at the table.
